These three-ingredient pancakes can be made without eggs or flour
One benefit of lockdown, for those of us who are able to work from home, is having more time to make fancy breakfasts.
The decadent, delicious breakfast foods that were once only for the weekends, can now be made any damn day you feel like it. And pancakes have to be top of that list.
However, if you’ve run the gauntlet at your local supermarket recently, you will have probably realised that there isn’t much in the way of baking ingredients.
So, we’ve unearthed our favourite recipe for pancakes – that you can make without any of the traditional ingredients that might be harder to find at the moment.
These light, fluffy pancakes don’t require and eggs or flour – you might even already have everything you need in the cupboards. So make use of the extra time you save in the morning by not commuting, and give these a try.
This recipe serves one or two – making around six small pancakes. If you have more people in your lockdown household, simply double everything up.
- 1/2 cup rolled oats (45g)
- 1 medium banana (90g peeled)
- 3 1/2 tbsp milk of choice (52g)
Extra ingredients if you have them
- Pinch of salt, and a sweetener of choice if desired
- Cinnamon to taste
Grease a frying pan with butter or a vegan alternative.
Mix all the ingredients together using a hand blender, then pour ladles of batter onto the greased pan.
As soon as the pancakes are cooked enough that you can get a spatular underneath without breaking the pancakes, flip and cook for an additional minute.
If you have leftovers, they can be refrigerated or frozen.
Top them with whatever you like to put on your pancakes. Lemon and sugar, yoghurt and bluebuerries, Nutella. Get creative.
