Make cuisine crafty with these top tips to create a lunchbox masterpiece on a budget

ARE your kids’ school lunchboxes looking a bit lacklustre?

During lockdown, mum-of-three and Instagrammer Lucinda Baxter, came up with a savvy way to impress her little ’uns.

She says: “I theme the boxes around cute animals, football or Pokemon. It means they always eat their lunch.”

Here are Lucinda’s top tips to create a lunchbox masterpiece on a budget . . . 

GET CREATIVE: Lucinda says: “The centrepiece of the lunchbox is usually rice. I mould the rice into shapes using cling film and then add the little details with sushi seaweed sheets. I also have tons of small cookie-cutters in different shapes, for the cheese and ham. To begin with, I layer the box with spinach, add the rice animal on top and finish off with smaller foods.

My tip: The Range has a great collection of shaped mini-cutters, from £1.49.

TIME IS MONEY: It costs roughly £1.50 to make up a lunchbox and takes 20 minutes to an hour. To save time, pre-cut cheese, ham, cucumber and fruit and pop it in tubs for the week. You can also use cookie-cutters to mould rice.”

My tip: Storing fruit and veg in sealed containers in the fridge helps it last longer. Dunelm has affordable food storage containers, so pick up four one-litre tubs for £2.

LITTLE DETAILS: I use seaweed for the eyes and smiles and they take the longest time to cut out, so I usually pre-cut them and store them ready to use.

My tip: Tesco sells Yukata Sushi Nori seaweed sheets, £1.80 for five sheets.

TOP TIPS: Focus on the healthy foods that your child likes. Fruit and veg such as cucumber and carrots are inexpensive.

Shop from the end of the aisle in the fruit-and-veg section, for variation and low prices.
