6 kid-friendly meals you can prep ahead to make mornings a breeze

Mornings are a busy time for anyone, but throw kids into the mix and time seems to fly by even faster. Between school, work, doctor appointments, sports practices and more, your daily schedule is packed. However, you can make the mornings spent together feel less stressful and rushed when you prep these kid-friendly meals for breakfast and lunch.

No matter how you get your groceries from Walmart though, you can make these kid-friendly meals ahead of breakfast and lunch to make mornings a breeze.

1. Breakfast Quesadillas

Shopping List:

  • Whole Wheat Tortillas

  • Eggs

  • Shredded Cheese

  • Breakfast Sausage

This kid-friendly breakfast quesadilla can be made the night before and reheated for breakfast time. Start with a tortilla and top it with scrambled eggs, cheese and chopped or crumbled sausage (you can also sneak in some veggies here if you’d like). Fold the tortilla in half and heat it in a pan on the stove until the cheese is melted and the tortilla is slightly crisp. Kids can dip the quesadilla in salsa, ketchup or sour cream, or go a sweeter route and dip it in maple syrup.

2. Egg Bites

Shopping List:

  • Eggs

  • Milk

  • Shredded Cheese

  • Red Bell Pepper

  • Red Onion

  • Diced Ham

Cook the chopped pepper, onion and diced ham on a pan over medium-high heat until the onions are translucent. In a separate bowl, whisk five eggs, two tablespoons of milk and half a cup of shredded cheese. Combine ham and egg mixture and pour into a greased mini muffin pan. Bake for 15 minutes in the oven at 350°F the night before. When ready to eat, heat them up in the microwave. Kids can dip the egg bites in ketchup and, for a well-rounded breakfast, eat with a piece of fruit and a slice of toast.

3. No-Bake Oatmeal Bars

Shopping List:

  • Pitted Dates

  • Maple Syrup

  • Peanut Butter

  • Unsalted Almonds

  • Rolled Oats

  • Dried Fruit

  • Dark Chocolate Chips

This recipe for oatmeal bars by Minimalist Baker uses less than 10 ingredients and doesn’t require any baking. Just place them in the fridge to set for 15–20 minutes and store them in an airtight container to enjoy as a quick and tasty breakfast for a few days. They’re especially great for eating on the go.

4. Turkey And Swiss Cheese Roll-Ups

Shopping List:

  • Whole Wheat Tortillas

  • Sliced Turkey

  • Swiss Cheese

  • Butter Lettuce

  • Hummus

Spread plain hummus or another hummus flavor of your choice onto a tortilla and top with Swiss cheese, turkey and lettuce. Then, gently roll up the tortilla to make a wrap. You can cut the wrap into smaller pinwheel-like sandwiches and store in an airtight container the night before eating them.

5. Pasta Salad

Shopping List:

  • Penne Pasta

  • Italian Dressing

  • Cherry Tomatoes

  • Red Onion

  • Green Bell Pepper

  • Small Mozzarella Balls or Cubes

  • Black Olives

  • Salami

Mix all of the ingredients in a bowl and store in the fridge in an airtight container for up to a week. Just add more dressing before serving as needed. You can also adjust the ingredients according to your child’s taste, but most will love the mozzarella cheese balls and the salty salami.

6. Mac ‘N Cheese Bites

Shopping List:

  • Kraft Macaroni and Cheese

  • Goldfish Cheddar Crackers

Make the macaroni and cheese according to the package’s directions, but cook the pasta about two minutes less than instructed. Once done, pack the macaroni and cheese tightly into a nonstick cupcake pan and sprinkle with crushed Goldfish Crackers. Bake for 8–10 minutes in the oven at 425°F and once done, use a toothpick or spoon to pop out the Mac ‘N Cheese Bites. When your kids are ready to eat, they can enjoy these bites cold or warmed up in the microwave.
