Valerie Bertinelli Swears by This Summertime Treat

It’s that time of year when every celebrity chef turns to one trusted recipe or another to get through the dog days of summer.

For Food Network star Valerie Bertinelli, it’s her tried-and-true Cherry-Peach Pantry Galette. And it screams ‘summer!’

Hard to believe it’s true, but Bertinelli – the former teen star of 1970s and 80s hit comedy series One Day At A Time – celebrated her 60th birthday this past April 23, in quarantine. She’ll always be the baby-faced Barbara Cooper to so many fans of the classic show.

What made it so painful for Bertinelli, apart from the fact that an in-person party during a pandemic isn’t happening, was not being able to see or hug her son, Wolfgang.

The 29-year-old is her son with her former husband, Van Halen guitarist Eddie Van Halen. The couple married in 1981 and divorced in 2007.

While he did, indeed, visit her for her birthday, it was from a distance, outside of her home and just not enough for a mom in need of a birthday hug, as Bertinelli expressed on Today in a conversation with Hoda Kotb.

“Wolfie did come over one day with his mask and his gloves on, and he wouldn’t come in the house,” she said. “He just stood outside. It’s heartbreaking, but sheltering in place is what’s going to get us through this, as hard and challenging as it is…”

Mother and son were finally reunited in July 2020 and the Valerie’s Home Cooking star, whose Instagram name is “Wolfiesmom” was in heaven.

“Oh, when he gave me a hug, it lasted a long time,” she told the morning show. “I wouldn’t let him get out of the hug. It was just so nice — so nice to hug my son again.”

Speaking with US Weekly in July 2020, Bertinelli shared one of her favorite summer recipes featuring two seasonal produce stars: cherries and peaches.

Bertinelli told US why she loves making it so much.

“I always prefer a galette because [many] say, ‘easy as pie,’ [but] pie isn’t that easy,” she joked. “Galettes are easy.”

A great part of this recipe for the actor is using premade pie crust, as well as, if preferred, frozen fruit.

“When I first came up with this recipe, it was with frozen fruit,” she recalled. “I always have frozen fruit in my freezer.”

After combining the fresh or frozen fruit with sugar, vanilla, cinnamon, and corn starch, it’s poured into the piecrust. Then the piecrust edges are folded over the filling, Bertinelli notes, for a pretty presentation.

The flavor combination is perfection. “The peaches melt in your mouth,” the Kids Baking Championship judge said, “and there’s a tartness to the cherries, and then the crunchy crust all together — it gives you all kinds of different flavors and textures in your mouth. It’s so good!”
